Making Cheese with love

We moved from Mexico to the United States a few decades ago and we started making cheese because we love it in our family and we wanted to start a tradition for our daughters, create a legacy we could pass on to her.
We thought of no better way to bring some of the flavorful food from Mexico and other countries in Central America to people in the US, than making traditional artisanal cheese that is at the heart of so many widely-known and loved dishes. We bought a facility in Freeport, Long Island, and the rest is history. Now our cheese is served in dozens of restaurants in New York, and this is just the beginning!
